Our development chef John has created this wholesome Shepherds Pie recipe which can be adapted for all dietary requirements.

This recipe will serve 50 portions. 

Ingredients

  • 5kg minced lamb or beef
  • 3kg onions, finely chopped
  • 2kg carrots, finely diced
  • 2kg peas
  • 2.5kg canned chopped tomatoes
  • 500g tomato purée
  • 1.5L beef or vegetable stock
  • 100ml Worcestershire sauce
  • 5kg potatoes, peeled and chopped
  • 500ml milk
  • 250g butter
  • 5 tbsp vegetable oil
  • 2 tbsp dried mixed herbs
  • Salt & pepper to taste

Method

  1. Prepare the mash:

    • Boil the potatoes in salted water until tender.
    • Drain and mash with butter and milk. Season to taste.

     

  2. Make the filling:

      • Heat the oil in a large pan and sauté the onions and carrots until soft.
      • Add the minced lamb/beef and cook until browned.
      • Stir in the tomato purée, chopped tomatoes, Worcestershire sauce, herbs, and stock.
      • Simmer for 30 minutes, adding peas in the last 10 minutes. Season to taste.

     

  3. Assemble the dish:

    • Divide the filling evenly into trays.
